Encinitas kitchens fall into two rough generations, and which one you have is largely a question of which side of I-5 you live on. West, in Old Encinitas, Leucadia and Cardiff, the houses are older and considerably smaller than the appliances in them: kitchens gutted and rebuilt around a Sub-Zero built-in and a Wolf range decades after the place was framed, with the column dropped into an opening cut to suit and a heavy custom panel hung on the door. East, in New Encinitas, Village Park, Encinitas Ranch and out toward Olivenhain, the equipment came with the house, which usually means matched panel-front refrigeration, a Wolf or Thermador cooking suite, and a wine column in a butler's pantry or a garage wall that takes afternoon sun.
The division by brand is not subtle once you have been in enough of these kitchens. Sub-Zero holds the refrigeration: built-ins, columns, wine storage, undercounter drawers and ice makers. Wolf is cooking and only cooking, meaning dual-fuel and gas ranges, rangetops, cooktops and wall ovens, since the company has never built refrigeration at all, so when somebody calls about a Wolf refrigerator it is a Sub-Zero standing beside a Wolf range. Viking turns up in the early-2000s coastal remodels and covers both sides, cooking and refrigeration. Thermador appears most in the newer inland construction and brings more electronics and more fault codes with it. Cove is the dishwasher, and it usually arrives as part of a recent Sub-Zero and Wolf set.
